Pumpkins seeds are high in magnesium, zinc and full of Omega 3 Fatty Acids. It is known to be rich in natural phytoestrogens which helps increase the good cholesterol in your body, decreases blood pressure, is good for your heart. Helps with hot flashed, headaches and is effective as an anti inflammatory for joint pain.
Once you scoop out your pumpkin, remove the big chunks of pumpkin flesh and rinse with water. Drain and with a clean towel dry off any extra water. Preheat your oven to 300F. Place cleaned pumpkin seeds on a cookie sheet and drizzle with veggie or olive oil. Sprinkle with sea salt. (I use a mixture of dehydrated garlic/salt) Cook for about 30 minutes.
Flipping with a spatula so the seeds don't burn every 10 minutes. Really watch near the end as they can go from roasted to burnt quickly. Allow to cool and store in an airtight container for future snack use!
