Super easy to make too, although time consuming. You can make this in molds or you can pour onto a tray sprinkled liberally with icing sugar. Whichever you prefer they are fabulous.
1 chunk Ginger root
2 Tablespoons Spearmint or Peppermint Tea Leaves (peppermint contains more menthol)
In a medium saucepan combine:
1/2 cup sugar
1 cup maple syrup
1/2 cup coconut oil
1/2 cup mint and ginger tea brewed then strained
1/2 cup honey
Put these ingredients in a pot and cook slowly over medium heat until it reaches the hard crack stage. 220F with a candy thermometer. Once at this stage, remove from heat and pour into silicone molds dusted with icing sugar OR drizzle randomly over a cookie sheet that has been lined with parchment paper and generously dusted with powdered sugar. Allow to harden and then store in an airtight container.
