In a large pot over medium heat sautee in 2 Tablespoons oil or butter:
1 large onion, chopped
2-3 stalks celery, chopped
2 cups peameal bacon, sliced
To this add 4 medium potatoes, peeled & cubed
1 cup chopped frozen string beans
Add 3 cups water and chicken granules or chicken stock. Whichever you have on hand. Cook on medium until the mixture begins to boil. Reduce heat to a simmer and cook an additional 20 minutes or until potatoes are soft. To this add 1 can of drained white beans and heat through. Add salt and pepper to taste. If desired, dried thyme can be added to this dish during the simmering stage. Serves 4 good helpings.
