
Chili is one of my go to recipes when I'm in a serious time crunch and need something filling for all my boys. You can use bagged beans and cook them slowly through the day or cheat like I do and use canned beans.
In a large pot over medium heat brown:
1 medium onion, diced
1 lb of organic hamburger (if possible) or ground turkey
1 clove of garlic, minced
(you can add green peppers, red peppers, mushrooms)
1/2 tsp salt
1/4 tsp pepper
Once cooked add:
3 Tablespoons Chili Powder (or to taste)
1 teaspoon Italian spices
1/4 tsp cayenne pepper
2 cans baked beans in tomato sauce
1 large can kidney beans
At this point you can add 1 can tomato soup (hard to find gluten free) and add 1/4 cup water OR 1 large can crushed tomatoes.
1/4 cup ketchup. Heat through thoroughly. Tastes even better the second day!
