So my boss texted me and said it was quiet at the shop so I could take the day off!!!! Woo hoo! Naveed you are awesome. A full day to play in the kitchen.
For this recipe you will need:
2 cups of my gluten free all purpose blend
2 teaspoons sugar
1 heaping teaspoon baking soda
1/2 teaspoon salt
1 teaspoon Foccacia Blend from Epicure (or you can add whatever savory dried herbs you have on hand. Italian Seasoning would do nicely as well)
2 large eggs
1 cup water
2 teaspoons vegetable oil
In a small bowl whisk together the eggs, oil and the water.
In a medium bowl combine all the dry ingredients. Using a whisk, stir all the ingredients gently but thoroughly together.
Add the wet ingredients to the dry ingredients. The dough will be fairly stiff.
In a fry pan on medium heat, add 1 teaspoon of vegetable oil. Once the pan and oil is hot, gently place the dough pita. It will fry up quite quickly. If you find it is cooking too fast, reduce your stove temperature to low. Cook as you would a pancake. Continue to fry up the pita's one at a time adding more oil as required. These taste wonderful. You can use them to dip in stews or to use as a sandwich replacement. They freeze well too!
