This is one of those recipes I usually eyeball it and add a whole bunch of different ingredients into it. Below is the basic recipe but feel free to change it up! You can take out the Quinoa and add rolled oats instead. Take off the chocolate topping and just add chocolate chips to the bars itself.
In a microwavable bowl pour:
1/4-1/2 cup honey (depending on how sweet you'd like them)
3/4 cup natural peanut butter (or you can use regular peanut butter just watch out for the sugar high!)
Melt ingredients 30 seconds at a time. Once melted...stir in 1 teaspoon vanilla or 2 Tablespoons Maple Syrup depending on what flavour you would like.
Add to this bowl:
I 1/2 cups rice crispies
1/2 cup sesame seeds
1 cup shredded unsweetened coconut
1/2 cup quick oats OR 1/2 cup puffed Quinoa
1/2 cup pumpkin seeds
You can add chopped nuts, raisins or dehydrated strawberries.
Mix thoroughly. Press into an ungreased 8X8 pan.
For a chocolate topping, in a glass measuring cup, pour 1/2 cup chocolate chips with 1 tablespoon of milk and microwave for 30 seconds. Stir until the chocolate chips melt. Pour on top of bars. Refrigerate for at least 1 hour. Cut into squares and enjoy!
