Recipes for homemade extract are quite simple. Alcohol, a few vanilla bean pods and time. You can use glycerin instead if you prefer not to use alcohol but booze is readily available where I come from. Vodka and whisky are what I'm using for my first batch! Whiskey I've researched, when used as a base should create a bourbon vanilla of sorts. Kinda makes you want to dab a little behind your ears, add the rest to a glass of milk with one giant ice cube and sip it!
My hubby and I aren't big drinkers so I found our left over alcohol hiding in the back cupboard and poured each into separate jars....sliced 2 vanilla bean pods down the middle and added two pods to each batch. I used a clip lid jar but you can use whatever you have handy. Now just to wait a month to allow the vanilla to infuse. I found that I preferred the Vanilla in the Vodka rather than the Vanilla in the Whiskey. I found that the Vodka mixture tasted more like true Vanilla. The whiskey brew was still very strong and almost overpowered the delicate scent of the vanilla bean pod.
Vanilla is one of the most widely used spices in the world. Vanilla has a compound called vanillin which in studies has been found to have anti cancer effects. It also has been found to be an anti mutagen and anti oxidant which means it's heart healthy!
