You will need:
1/2 cup butter at room temperature (NEVER margarine for this recipe)
1/4 cup white sugar
1 large egg, separated
1/2 teaspoon vanilla extract
1 cup flour
1/8 teaspoon salt
3/4 cup ground nuts (can be a mixture of walnuts and pecans if you wish)
1/4 cup jam of your choice
This recipe makes just over a dozen cookies. I usually double this batch.
Preheat oven to 350F
Line a baking sheet with a silicon liner.
In a bowl beat the butter and sugar until light about 2 minutes. Beat in the egg yolk and vanilla extract. Beat until combined. Add the salt, and then the flour. Roll the dough into balls about the size of a loonie in your hands.
With the leftover egg white. Whisk with a fork on a dessert plate. On a second plate place the ground nuts. Roll the rounded cookies into the egg white then into the nuts and place back onto tray. Using your thumb or the edge of a small spoon make an indent into the center of each cookie.
Bake for 12-15 minutes. Remove from oven and fill with a little dab of jam. Allow to cool. Keep stored in an airtight container....although I doubt they will last that long.
