In a medium bowl whisk together:
1/2 cup milk
1 teaspoon vanilla
1 teaspoon cinnamon
3 tablespoons sugar
To this sift together and add:
1 teaspoon baking powder
3/4 cup flour OR spelt flour OR gluten free flour blend
Allow the batter to sit until bubbles begin to form.
Peel 3 apples, core and cut into round slices
Coat apples in batter and drop slices into batter then drop into very hot oil in a pan. I use my wok as it seems to allow them fritters to float without having to use so much vegetable oil. Once the apple fritters are done you will have extra batter left over. To this extra batter add one mashed banana. Voila now you have banana and apples fritters!
Cook about 3 minutes and flip, and cook another few minutes or until they turn golden brown. Remove from oil with a slotted spoon. Place on paper towels to absorb the excess grease. You can keep them hot in a 250F oven. Dust with icing sugar befor you are ready to eat and enjoy!
