You will need:
1/4 cup virgin coconut oil (good quality)
1/3 cup pure cocoa powder (best quality you can find)
1/4 cup raw cashews
1/4 cup mixed ground nuts
2 cups shredded coconut
1/4 cup honey
12 dates, softened in hot water, then drained
pinch of salt
In a glass measuring cup melt the coconut oil in the microwave. About 30 seconds. Add to this the pure dark cocoa powder. Doing this will allow the powder to melt into the oil. Add a pinch of salt. By adding salt it tricks your tastebuds into thinking the cookie is sweeter then it is and you will require less honey. You can also add 1./2 teaspoon of vanilla extract if you wish.
In a food processor add the cashews, ground nuts, coconut, honey and dates. On medium speed process about one minute. Add to this the melted coconut oil and powder mixture. Blend until well combined.
With your hands roll into small balls and flatten onto wax paper. Store in the fridge to keep the cookies nice and firm. Room temperature is fine as well, although the hotter it is, the more liquid the coconut oil will become. Makes 12-18 cookies. Enjoy!
