To make this dessert you will need a GF white cake mix. Make according to package instructions. Add to the batter the grated rind of one lemon. Save the rest of the lemon for your icing. Add to the batter 1 cup pitted fresh cherries OR 1 cup blueberries.
Cook according to box instructions. You may have to cook an additional 5 minutes due to the extra moisture in the fruit. Once baked, remove from oven and allow to partially cool.
While still warm pour your lemon icing over the cake. It will soak in and create a crust as it cools. To make the icing, juice 1/2 of the lemon and put liquid into a small bowl. Whisk in icing sugar. You will need about 1 cup icing sugar or more depending on how juicy your lemon is. Allow the cake to cool completely, slice and enjoy!
