In a food processor combine:
One 15oz can chickpeas, rinsed and drained
1/2 cup almond butter OR Peanut butter
1/3 cup maple syrup
1 teaspoon pure vanilla
1/4 tsp baking powder
1/4 tsp baking soda
1/3 cup chocolate chips (or carob chips)
Preheat oven to 350 degrees F and grease an 8×8 inch pan. In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in 1/3 cup of chocolate chips. This recipe is very rich!
Spread batter evenly into prepared pan. Bake for 20-25 minutes or until toothpick comes out clean and edges are just turning brown. The batter may look underdone, but that's okay you want them to be moist. Cool for about 20 minutes then cut into bars. You can also sprinkle them with sea salt at this point. Just a bit though. I actually liked them better the second day! Enjoy!
