I modified this recipe from a recipe of another recipe! That is how I cook! If you have celiac disease than make sure you use gluten free oats.
However, I haven't found an issue with regular oats if you are just sensitive to gluten.
In a mixer add:
2 very ripe banana's (2 large or 3 small)
1/4 sunflower oil (yes I know Canola Oil is cheaper but I haven't found one yet that isn't genetically modified in some way and Palm Oil is harvested in an unethical way!) egads...all I want is cooking oil!
1/2 cup brown sugar
1 tsp vanilla
2 tsp cinnamon or less to taste
1/2 tsp salt
1 heaping teaspoon baking powder
Mix until well combined.
Than add 2 Tablespoons Pecan Meal
3/4 to 1 cup oats (if the mixture looks too soupy add up to the one cup of oats)
1/2 cup chocolate chips or walnuts
Pour into a 8X8 sprayed pan or make a double batch and cook in mini loaf pans. Cook in a preheated 375F oven for approximately 30 minutes or until a knife inserted comes out clean. Allow to cool. Cut into squares and enjoy!!
