Purchase a gluten free plain cake mix. Make it according to the box instructions. To the cake batter add:
1 cup of shredded carrot
1/2 cup of raisins
1 teaspoon of pumpkin pie spice
Mix together and bake at 350F in
a square 8X8 greased pan.
Allow to cool.
Sprinkle powdered sugar on top of the cake or frost with cream cheese frosting.
