For something filling first thing in the morning or even for a snack later in the day, a homemade frittata does the trick.
In a frying pan with a bit of butter, sautee:
Butter a 9X12 baking dish and add to this:
In a seperate bowl beat together 5 eggs. Season with salt and pepper. Add the sauteed mushroom and onion mixture. Combine the rest. Bake at 325F for 20-25 minutes. Allow to cool abit and serve with salsa or ketchup if you wish. Enjoy!

- 5 button mushrooms, sliced

- 1 cup shredded marble cheese
- 1/4 cup shredded Parmesan cheese
- 3 cups chopped or shredded, cooked potato
- 1/2 cup ham, chopped
- 1 teaspoon spice of your choice, Italian Seasoning, basil or cilantro
