In a large pot sautee one medium onion chopped in a small amount of oil or butter.
Add to this 2 tomatoes chopped
1 clove garlic minced
2 Tablespoons Sugar
2 Tablespoons Chicken Stock granules
Salt and Pepper to taste
Add one large can of tomato juice (yes the kind you drink) plain is best
Add one bay leaf
To this, add one small handful of chopped fresh basil or to taste. Bring to a boil. Simmer for about 2o minutes. Remove the bay leaf and with a hand blender jeegh it. Yes I made that word up. Jeegh... don't know how else to creatively explain it. Serve the soup as is or add 1 cup milk or cream to the pot and bring back up to heat. This can be eaten hot or cold. Enjoy!
