Horehound has been used for centuries to help with coughs. I initially used a really strong horehound tea but found it way too bitter for my liking. So here is my recipe that worked out well.
1 cup sugar
1 cup maple syrup
1/2 cup horehound tea (brewed for as long or as little as you would like)
1/2 cup honey
Put these ingredients in a pot and cook slowly over medium heat until it almost reaches the hard crack stage. About 200F with a candy thermometer.
Add to this:
1/4 cup butter
1/4 cup orange juice concentrate
Resist the urge to turn the heat up higher to speed up the process. It will burn unless you keep it on medium and check it often. Once you can drizzle a spoonful of the syrup into a cup of cold water and have it turn to brittle threads–take it off the heat immediately. Pour into molds that have been dusted with powdered sugar. If you don't dust them with the sugar they will stick so tightly to the silicone you'll wreck the molds. Allow to cool about 1 hour and turn out. Dust with icing sugar so they don't stick together and store in a cool dry place.
