In a large pot saute one medium onion, diced in 1/8 cup of butter
Add to this, 2 chicken breasts, cut into bite sized pieces
1 clove garlic, finely grated or chopped
To this add 4 large potatoes, freshly scrubbed and cubed
2 large carrots diced, or a handful of baby carrots, diced
Once the chicken is cooked add 4 cups water
At this point you can salt and pepper to taste
Add 2 tablespoons chicken stock granules
5-6 sprigs of thyme, leaves removed OR 1 1/2 teaspoons dried thyme
1 cup frozen or fresh string beans cut in half
Bring to a boil then reduce to a simmer.
Cook until potatoes are tender.
