Chop one large onion and sprinkle over top of potatoes. At this point you can add sliced mushrooms if you have them.
Drizzle with vegetable oil until just coated. Add 4 chunks (about 1 tablespoon each) of butter. I find the butter is what really allows the dish to crisp up.
Salt and Pepper to taste and about 1 tablespoon of Italian Seasoning.
Variations: Use 1/2 Potatoes and 1/2 Sweet Potatoes. The sweet potatoes tend to cook more quickly so they can be left a little larger in size.
For spice you can use: Foccacia Spice Blend, Herb and Garlic, Pizza Blend (I buy some of my blends from Epicure) grab what you have in your cupboard and experiment!
You can also add 1 Tablespoon of grainy mustard to your oil before drizzling over the potatoes. The mustard defines the taste! If you use mustard don't add too much dried spices as the flavours tend to get confused. Simple is best.
Roast at 400F on a metal cookie sheet for about 30-40 minutes, flipping twice during the roasting process.
You can add shredded cheese of your choice during the last few minutes of cooking if you prefer. See!! The possibilities are endless!
