Being a single mom for many years and being on a tight budget I found that the one thing I could control was food. I would go through my cupboards seeing what leftover odds and ends I had in boxes and create something from it rather than have it go to waste. My grandmother used to say to me that I could rub two pennies together to get a dime.
One of the pet peeves I have is my lovely children leaving a bowl full of cereal left in a box that sits there forever. Yesterday was no exception. I was doing a mini clean out of my cupboards and I happened to find 4 boxes of cereal that had just enough in them to warrant throwing it in the garbage or doing something quick with it before they went stale. This is when my creativity and frugal tendencies kick in.
In a medium sized bowl mix:
1/2 cup butter (melt on high in the microwave for about 40 seconds or until butter melts)
Add to this one heaping 1/4 cup of brown sugar
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
Mix well until sugar is dissolved and add 5-6 cups gluten free cereal of your choice
Add to this 1 cup almonds. Combine well.
Spread out onto a greased cookie sheet and bake at 300F for about 30 minutes or until the sugar starts to crisp up on the cereal. Remove from oven and allow to cool. The cereal mixture will crystalize as it cools. At this point you can add dried fruit or chocolate chips. I enjoyed it plain. As did the rest of the family as it didn't last very long. Enjoy!
